Baked Parmesan fries

Baked Parmesan fries - minced garlic, herbs de Provence, olive oil - bake, then grate fresh Parmesan on top. Healthy and delicious!

Ingredients
  • 2 large russet potatoes
  • 3 cloves garlic
  • 1 tablespoon Herbes de Provence
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly grated parmesan
  • Salt and freshly ground black pepper

Apple Roses

Yummy... Apple Roses Pastry Recipe & Picture Tutorial ~ Easy, uses Puff Pastry Sheets sprinkled with lemon zest, sugar and cinnamon and nutmeg!
Ingredients

  • 1 puff pastry sheet
  • 3 apples
  • 5 TBSP sugar or splenda
  • 2 teaspoons cinnamon
  • 1 pinch nutmeg
  • 1 teaspoon lemon zest
  • 4 cups water
  • 3 TBSP sugar

Grilled Chicken with White Barbecue Sauce

Grilled Chicken Thighs with White BBQ sauce this was really good and we liked the white BBQ sauce nice to have something not so sweet but loved the tang.
Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup white vinegar
  • 1/4 cup apple juice (without added sugar)
  • 1 - 2 teaspoons horseradish (I used 2 teaspoons, but I really like horseradish)
  • 1 tsp. lemon juice
  • 1/4 tsp. cayenne pepper (more or less to taste; it was only slightly spicy with 1/4 tsp.)
  • 1-2 tsp. sugar, Splenda, or Stevia in the Raw sweetener (optional; taste to see if you want the mixture a little sweeter) 
  • 1/3 cup olive oil
  • 3/4 cup mayo (or a mixture of mayo and light mayo)

Pizza Rolls

Oh Pizza. I looooove pizza. I think pizza is one of the things you can make fancy or casual, but nothing quite comes close to homemade pizza. Dough can be tricky and messy but I have finally found the perfect recipe. Not too many ingredients. Not too many dishes. Just the right puffy crust. & endless possibilities…
Ingredients

  • 1 roll refrigerated pizza dough (or use Our Favorite Pizza Dough recipe)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil or melted butter
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning (this is usually just a combination of basil, oregano, thyme and marjoram)
  • mozzarella cheese
  • pizza toppings of your choice: canadian bacon and pineapple, pepperoni slices, italian sausage, etc.
  • marinara or pizza sauce

Chicken Tortilla Soup

This soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well. Garnish with chopped fresh avocado, Monterey Jack cheese, crushed tortilla chips, or green onion!

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1-1/2 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Onion
  • 1/4 cup Diced Green Bell Pepper
  • 1/4 cup Red Bell Pepper
  • 3 cloves Garlic, Minced
  • 1 can (10 Oz. Can) Rotel Tomatoes And Green Chilies
  • 32 ounces, fluid Low Sodium Chicken Stock
  • 3 Tablespoons Tomato Paste
  • 4 cups Hot Water
  • 2 cans (15 Oz. Can) Black Beans, Drained
  • 3 Tablespoons Cornmeal Or Masa
  • 5 whole Corn Tortillas, Cut Into Uniform Strips Around 2 To 3 Inches

FOR THE GARNISHES:

  • Sour Cream
  • Diced Avocado
  • Diced Red Onion
  • Salsa Or Pico De Gallo
  • Grated Monterey Jack Cheese
  • Cilantro
