Beef Barley Soup

Beef Barley Soup - it is amazing!!! Nothing is better than a bowl of this on a cold night. Not only is it full of flavor, but its full of healthy veggies!! It freezes great too, so the leftovers can be stored for another evening! With the cold weather among us, this is just the thing to make!
Ingredients:

  • 3/4 lb. leftover roast/steak
  • 1 cup onion, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup celery, chopped
  • 2 garlic cloves, minced
  • 1 Tablespoon rosemary, chopped
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 4 cans low-sodium beef broth
  • 1/2 cup dry red wine (optional)
  • 1 Tablespoon Worcestershire
  • 1/2 envelope onion soup mix
  • 3/4 cup uncooked pearl barley
  • 2 Tablespoons butter
  • Salt and pepper
