World’s Best Sugar Cookies

World's Best Sugar Cookies - My mom would make them every year along with Christmas Fudge to pass out to our friends and neighbors at Christmas time. They are the perfect Christmas cookie.
Ingredients:

  • 1 cup powdered sugar

Croissant Pizza Roll-Ups

These are my favorite things to make when I don't actually feel like cooking: croissant pizza rolls. Lay the rolls out flat, spread sause on them, add meat, cheese and whatever toppings you like, roll them up and bake according to what the directions on the can say! Easy-peasy!

Beef Barley Soup - it is amazing!!! Nothing is better than a bowl of this on a cold night. Not only is it full of flavor, but its full of healthy veggies!! It freezes great too, so the leftovers can be stored for another evening! With the cold weather among us, this is just the thing to make!

Spicy Tomato Bacon Spaghetti

So cheap and easy to make, this is a hugely tasty dish to fall back on when the cupboards are looking bare. Great for students, too!
Ingredients

  • 1/2 of a 13 or 14 oz. package spaghetti  (I used whole wheat)
  • 8 slices applewood smoked bacon, chopped  (you could use regular bacon just fine)
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1/2 tsp. red chili pepper flakes
  • 2 (14.5 oz.) cans diced tomatoes, undrained
  • 1/2 c. reserved cooking water from cooking the pasta
  • 1/2 c. chopped fresh parsley
  • Sea salt & freshly grated black pepper, to taste
  • Freshly grated Parmesan cheese
  • Additional chopped fresh parsley

Tamale Pie Casserole

Tamali Pie Casserole ~ spicy ground turkey & vegetable filling topped with a thick layer of golden cornbread. Just perfect for your Cinco de Mayo celebration, or everyday dinner!

Weekend Biscuit Egg Casserole - used turkey sausage and added sauteed veggies. Liked by all.

  • 1 can of buttermilk biscuits (8 count)-  (I used open nature biscuits as pictured but have also used Pillsbury Grands Biscuits) 
  • 1 pound of any breakfast sausage roll (browned, drained, and cooled)

  • 5 eggs, beaten
  • 2 egg whites
  • 3/4 cup milk

Golden Macaroni and Cheese

I found this recipe and this is absolutely amazing!I just cooked this up, and it is absolutely delicious. I used a little less butter because I prefer it to be a little more crisp, but it is absolutely delicious!
Ingredients
  • 1 (8-ounce) package elbow macaroni
  • 2 cups milk (I use whole milk)
  • 1/4 cup all-purpose flour
  • 1 teaspoon onion salt
  • 2 (10-ounce) blocks sharp Cheddar cheese, shredded and divided ( I use one block of Sharp Cheddar and one block of Extra-Sharp Cheddar cheese)
  • 1 cup soft plain breadcrumbs ( The recipe suggest homemade breadcrumbs, but I use store bought - not Italian breadcrumbs, just plain)
  • 1/4 cup butter or margarine, melted (I use butter)

Insanely Delicious Turtle Cookies

These cookies are WONDERFUL! They are sweet but not too sweet, have lots of flavor and texture, are visually appealing, but are a little time consuming. Definitely easier with a stand mixer (used a hand mixer the first time- works but can be a bit tedious).

Crockpot Chicken Noodle Soup

I love soup on cold winter nights. I especially love soup that cooks itself while I'm at work. Combine these two things and you have Crockpot Chicken Noodle Soup.
Ingredients

  • 1 1/2 cups carrots, chopped
  • 2 ribs celery, chopped
  • 1 medium cooking onion, peeled and sliced (in large pieces so picky eaters can easily pick them out)
  • 2 slices ginger (approx. 1/4 inch thick each), peeled
  • 2-3 stocks fresh rosemary
  • 8 boneless, skinless chicken thighs (I used a few more because the club-sized package was on sale)
  • 1 container low sodium chicken broth (approx: 900mL—if not using wine add additional broth)
  • 1 cup white wine (Optional but highly recommended)
  • Coarse salt and ground pepper to taste
  • 2 cups egg noodles

Meatball Sub Casserole

There are several versions of meatball sub casserole online and after several attempts, we created a version we love.
Ingredients

  • Loaf of French bread or ours*
  • Butter or margarine
  • 1/2 teaspoon garlic salt (omitted from photo)
  • 8 oz of cream cheese, softened to room-temperature (omitted from photo)
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon of Italian seasoning
  • 1 pound of frozen, fully cooked, thawed Italian meatballs (NOTE: it is often sold in 2 pound bags so use only 1/2 a bag.)
  • 1 can Hunts Spaghetti Sauce (any flavor, our favorite is Garlic & Herb)
