Cookies & cream layer bars - mine ended up being delicious but way too gooey. I think I used too much butter (that's what happens when you don't really measure things) but this was still a hit!

  • 1/2 cups Oreo crumbs
  • 1/2 cup butter, melted
  • 1 (14 oz) can of sweetened condensed milk
  • 1 cup of chopped up Oreos (not crushed to the point of crumbs though)
  • 1 cup of chocolate chips or chunks of your choice (white, dark, semi-sweet, milk or cookies & cream candy bars or Hershey’s Kisses even – in my case it was a variety of what was on the Easter clearance isle).

Cajun Chicken Pasta

Very good weeknight dinner..Tasty but not exceptional for company though. I did use half and half and then sprinkled some Wondra flour over the sauce to thicken. Will make again.


  • 16 oz. Penne Pasta, uncooked
  • 3 Boneless Skinless Chicken Breast, cut into small strips
  • 2 Roma Tomatoes
  • 4 Scallions (green onions)
  • 2 Garlic Cloves
  • 1/2 Cup Parmesan Cheese, freshly shredded, plus more for garnish
  • 3 1/3 Cups Heavy Cream
  • 5 Tablespoons Butter
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Cajun Seasoning, plus more for garnish (you can use more if desired, I'm kind of weak when it comes to spice!)
  • Salt & Pepper, to taste

Greek chicken and Potatoes

I have been doing a variation of this for years. My variations make it less Greek but so delicious! I add crushed tomato and red wine to the marinade, along with lots of fresh rosemary. I poke the chicken all over with a fork and do at least a 24 hour marinade. It smells amazing cooking and always gets raves.


  • 8 cloves of garlic
  • 1/2 grainy  mustard
  • 6 tbsp honey
  • 1/2 cup Dijon mustard
  • 1 tbsp of greek seasoning
  • 1 tbsp lemon pepper
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 3 tbsp lemon zest
  • 1/2 cup lemon juice
  • 2 1/2 cup vegetable oil
