Southwest Cornbread Salad

Southwest Cornbread Salad - Budget Bytes - Baked cornbread loaded with veggies and black beans and a lime southwesty flavored dressing, sounds good but i'm unsure how this would store, probably soggy...
Ingredients

CORNBREAD
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • ¼ cup vegetable oil
SALAD
  • 2 small tomatoes
  • 1 medium avocado
  • ½ small red onion
  • 1 (15 oz.) can black beans
  • ¼ bunch cilantro (optional)
DRESSING
  • 1 medium lime
  • ¼ cup olive oil
  • ½ Tbsp honey
  • 1 tsp ground cumin
  • ¼ tsp salt
  • ⅛ tsp garlic powder

  2. I make a different cornbread salad that has ranch drizzled all over it. Surprisingly it doesn't get that soggy like other breads would. Then again I'm not that picky. Can't wait to try this one.
