2 pounds red potatoes, scrubbed well and cut into 3/4-inch pieces
Coarse salt and freshly ground pepper
2 tablespoons white-wine vinegar
1 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
3 ounces crumbled goat cheese (1/2 cup)
1 celery stalk, finely chopped
1 small shallot, finely chopped
2 tablespoons finely chopped fresh flat-leaf parsley

2.Mom's Classic Potato Salad

2-1/2lbs medium-sized potatoes (about 4-5 potatoes – make sure all are same size)
4 large eggs
1/2 – 3/4 cup light mayonnaise
dash salt

1 Tablespoon cider vinegar
1 Tablespoon lemon juice
1/2 teaspoon sugar
scant 1/2 teaspoon dry mustard

4 pounds russet potatoes
1-2 tablespoons of olive oil
3 tablespoons apple cider vinegar
1 cup mayonnaise (I use olive oil flavor)
3/4 cup sour cream
1 teaspoon kosher salt and freshly ground black pepper
1 pound bacon, cooked, cooled and chopped
6 green onions, chopped
1 1/2 cups medium cheddar cheese, shredded

4.Roasted Potato Salad

Roasted Potatoes
2 lbs Yukon gold potatoes, cut into wedges
2 tbs olive oil

1 tsp vegetable bouillon (msg-free)
Dijon & Goat Cheese Dressing
2 tbs olive oil

1 large clove of garlic (minced)
2 teaspoons Dijon mustard
1 tbs fresh lemon juice
1 tablespoons apple cider vinegar
¼ teaspoon kosher salt
few grinds of fresh black pepper
½ tablespoons chopped chives
2 tbs crumbled goat cheese

5.Patriotic Potato Salad


2 lb baby red and yukon gold potatoes, (choose smallest potatoes)
1/2 C low fat buttermilk
1 tbsp dijon mustard
1 tsp dijon mustard
1 tbsp stone ground mustard
1 tsp stone ground mustard
1/2 tsp sugar
1 tbsp extra virgin olive oil
1/2 C minced scallions
1/4 C finely chopped radishes

2 lbs. fingerling potatoes, cleaned and sliced in half lengthwise
1/4 cup whole grain mustard
1 1/2 tablespoons summer savory, minced
2 teaspoons thyme, minced
1/2 shallot, minced
2 garlic cloves, minced
3 tablespoons red wine vinegar
2 tablespoons honey
1/4 cup extra virgin olive oil
Salt and pepper to taste
