Chocolate Eclair Cake

It's literally impossible to look at the golden, moist cake, light whipped cream and chocolate topping and say, "I'll just have one bite."

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs
1 (8 ounce) package cream cheese, softened
1 large box (5.1 ounces) vanilla instant pudding
3 cups milk
1 8 oz. container cool whip (just enough for a thin layer. I don't use the whole container) or one batch of homemade whipped cream
chocolate syrup or homemade chocolate sauce

Scrambled Egg and Cheese Breakfast Sandwich

Egg and cheese sandwiches may not be the healthiest breakfast, but is sure tastes great. This article contains some basic steps to make an egg and cheese sandwich.

For the Scrambled Eggs:

4 eggs
2 tablespoons milk
1 tablespoon butter
3 dashes salt
4 dashes pepper

For the Sandwich:

2 French or Brat rolls
2 tablespoons butter
½ teaspoon garlic powder
Scrambled eggs
½ cup shredded Monterrey Jack cheese
½ cup shredded sharp cheddar cheese
8 cherry tomatoes – cut in half (or ½ cup chopped tomatoes)
1 tablespoon chopped chives (or the green part of green onions)

Whole Chicken in a Slow Cooker

Whole Chicken in a Slow Cooker, FABULOUS idea!!! This would be amazing to come home to... [Do you have a favorite slow cooker? Please share the brand in the comments. It's time for me to get a new one.]
Rub Ingredients for the Chicken
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1 tsp white pepper
1/2 tsp garlic powder
1/2 tsp black pepper
For the Crockpot
1 cup chopped onion, approx 1 medium to large onion
4 to 5 carrots, scrubbed, no need to peel, chopped in halves or thirds
4 celery stalks, cut in thirds
2 garlic cloves, peeled and smashed
1 whole lemon quartered
3 1/2 to 4 1/2 lbs roasting or fryer chicken

Baked Spinach Dip Mini Bread Bowls

Are you a total fan of dipping bread in spinach dip? Well we got just the idea for you. I found this idea while I was looking for a spinach dip recipe. My plan is to make these for my next get together with friends because 90% of the time we serve spinach dip and bread it gets eaten.
13.3 oz roll of refrigerated french bread loaf, I used Simply Pillsbury
2 Tablespoons extra virgin olive oil
2 Cups baby spinach, coarsely chopped
1 clove fresh garlic, minced
3 oz softened cream cheese
1/2 Cup light sour cream
2 Tablespoons fresh shredded parmesan cheese
1/8 teaspoon McCormick Gourmet Ancho Chile Pepper
1/8 teaspoon McCormick Gourmet Garlic Salt
1/8 teaspoon McCormick Gourmet Sicilian Sea Salt
1/8 teaspoon freshly ground black pepper

Ice Cream Cupcakes

Ice Cream Cupcakes ~ Make these for a party and you wont have to scoop ice cream or cut cake when it comes time to serve!
For the cake:
1 cup of cake flour
½ cup of sugar
¼ tsp. of salt
1 egg
½ tsp. Vanilla
½ tsp. baking powder
¼ cup milk
2 Tbsp. Vegetable oil
4 drops pink food coloring or 2 drops food color paste
cupcake liners (preferably foil lined for sturdiness)
For the Ice Cream:
Mix equal parts vanilla ice cream and strawberry ice cream to make 3 cups all together… mix with sprinkles if desired
For the Whipped Cream Frosting:
1½ cups heavy whipping cream
1 tsp. vanilla
½ cup powdered sugar
1½ tsp. Unflavored Gelatin
4 tsp. water

Vegetable Pad Thai

No need to get takeout with this easy Vegetable Pad Thai. It's healthier than takeout too
1 package Stir Fry Rice Noodles
1 small {or half of a large} Red Bell Pepper, sliced into strips
